Serves: 8 Cook Time: 30 minutes
1 (12-oz.) package turkey bacon
¼ cup + 1 Tbsp extra virgin olive oil
½ medium onion, sliced thin
1 garlic clove, minced
⅓ cup + I Tbsp sherry vinegar
2 tsp whole grain mustard
½ tsp kosher salt
¼ tsp coarsely ground pepper
4 bunches frisee lettuce, torn
1 pint grape tomatoes halved
Cook turkey bacon according to package directions, crumble and set aside.
Saute onion and garlic in 1 Tablespoon of olive oil to soften about 2 minutes.
Stir in vinegar and next 3 ingredients; cook stirring constantly for about 1 minute.
Place frisee and tomato halves in a large bowl and drizzle with warm vinegar mixture, toss to coat. Sprinkle with crumbled tukey bacon and serve immediately.
