Bibb Salad with Fresh Herbs

Serves 6-8  Cook Time 10 Minutes

1/4 C extra virgin olive oil
4 tsp lemon juice and zest (grated lemon peel)
1/2 tsp Dijon mustard
2 heads Bibb (or Boston) lettuce
1/2 C fresh parsley, chopped
1/2 C fresh tarragon, chopped
1/2 C fresh dill, chopped
1/2 C fresh dill, chopped
salt and pepper to taste


  1. In a small bowl, whisk the olive oil, lemon juice, zest, mustard and salt and pepper and set aside.
  2. In a large bowl, tear the lettuce leaves into bite sized pieces and toss in the chopped fresh herbs.
  3. Add the dressing to the lettuce and herbs and toss. Serve immediately.
