Serves 4 Cook Time 5 Minutes
Ingredients:
5 plum tomatoes (or 15 cherry)
2 Tbsp fresh lime juice
2 Tbsp extra virgin olive oil
¾ lb low-sodium smoked turkey, cut into cubes (found in the meat section of the grocery)
3 tsp grated parmesan cheese
1 head romaine lettuce, chopped
Directions:
- Cut 2 tomatoes into quarters and set aside.
- Place the remaining tomatoes into a food processor or chopper with the lime juice, oil and a dash of salt. Process to a smooth puree.
- Divide the lettuce onto 4 plates. For each salad, drizzle 1 tablespoon of the dressing and top with one-fourth each of the turkey, parmesan and tomato wedges.
- Drizzle another tablespoon of dressing over the top and serve.
