This salad is for patients on the Nutriplus or Maintenance Program. This recipe supports patients that have lost their weight and are at or close to their goal weight.
Serves 4 Cook Time 9 minutes
2 Tbsp extra virgin olive oil
1 large shallot, diced
1/4 tsp fennel seed
1/4 tsp cumin
4 Cups grated carrots
2 Tbsp fresh lime juice
salt and pepper to taste
- In a small non-stick skillet, heat the olive oil over medium heat. Add the shallot and cook until softened (8 minutes).
- Add fennel seed and cumin and cook until fragrant, (1 minute).
- In a medium bowl. Toss together the carrots and lime juice, then add this into the shallot mixture and season to taste with salt and pepper.
Recommended for patients on the Nutriplus (Balance Your Pyramid) Program or Maintenance Program.
