Ingredients:
2 large tomatoes, chopped
1 large cucumber, chopped
1 large Italian sweet pepper
1/4 C red onion, finely chopped
1/2 C fresh parsley, chopped
3 Tbsp olive oil
1 1/2 Tbsp lemon juice
3/4 tsp kosher salt
3/4 tsp pepper
Directions:
Combine all the ingredients and let them sit at least 10 minutes before serving.
