Roasted Cauliflower Soup

Serves 4 Cook Time about 1 hour

8 C cauliflower florets
2 tsp olive oil
1/2 tsp kosher salt (divided)
non-stick cooking spray
1-1/2 tsp Smart Balance (or other butter substitute)
3/4 C  yellow onion, chopped
4 cloves garlic, chopped
4 C low-sodium chicken broth
1 C water
1/2 C half and half
1/4 C fresh parsley, chopped


  1. PPreheat oven to 450.
  2. Place cauliflower in a large bowl and drizzle oil and 1/4 tsp salt. Toss to coat and  arragnge them in a single layer on a rimmed cookie sheet coated with non-stick spray. Bake for 40 minutes or until tender.
  3. In a large pot, heat 1-1/2 tsp butter substitute, add onions and garlic and saute for 5 minutes. Add roasted cauliflower, stock, and 1 cup of water; bring to a boil. Reduce heat and simmer 20 minutes. Remove from the heat and add half and half. With an immersion blender (or a regular blender) blend, in small batches until smooth.
