Serves 6-8 (1-1/2 C)  Cook Time 8-10 hours

Ingredients:
1/2 lb lean ground beef
1/2 lb bulk turkey sausage
1 (28 oz) can low-sodium crushed tomatoes
2 tbsp package ranch dressing mix
2 tbsp package taco seasoning mix
1 small onion, chopped
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 (14.5 oz) can low-sodium RO*TEL®, undrained
3 tbsp and 1/2 tsp chili sauce
jalapeno peppers, diced (optional)
1 can or bottle dark beer
ground black pepper to taste

Directions:

  1. Brown the beef and turkey completely in a large skillet over medium heat; drain. Transfer to a slow cooker.
  2. Add the tomatoes, ranch dressing mix, taco seasoning mix, onion, green bell pepper, red bell pepper, Ro*Tel, chili sauce, jalapeno peppers, beer, and black pepper to the slow cooker. Set slow cooker to Low and cook 8 to 10 hours, or, if you prefer, on High for 4 to 6 hours.

Texas Turkey Chili

Serves 6-8 Cook Time 1 hour

Ingredients:
2 Tbsp olive oil
1 1/4 C yellow onion, chopped
1 Tbsp garlic minced
1 1/4 C green bell pepper, seeded and chopped
1 small sweet banana pepper, chopped
1 lb lean white meat ground turkey
1/4 lb Italian style turkey sausage
1 Tbsp chili powder
1/2 tsp cumin
dash cardamon
dash coriander
1 bay leaf
1 (12oz) can low-sodium diced tomatoes
kosher salt, pepper and hot sauce to taste

Directions:

  1. Heat oil in a large skillet until fragrant. Add onions, garlic, bell and banana peppers and saute, stirring occasionally, until tender (about 3 min.)
  2. Add turkey and cook until no longer pink. Use a wooden spoon to break meat into “crumbles”.
  3. Turn heat down to a low simmer and add the rest of the ingredients, mix to incorporate flavors.
  4. Simmer on low for 1 hour. This is also excellent in a crock pot.

Red Fish Stew

Metabolic Medical Center Recipes

Serves 6  Cook Time 17 minutes

Ingredients:
1 Tbsp olive oil
1 Cup onion, chopped
1/4 Cup celery, minced
2 scallions white and green parts, halved lenghtwise, sliced thin
1 tsp chili powder
*2 Cups water
1 Tbsp Worcestershire sauce
3/4 tsp salt
1 (14.5 oz) can no-salt-added diced tomatoes, undrained
1 lb. sea bass, flounder, grouper or other white fish, skinless, bonless, cut into chuncks

Directions:

Heat olive oil in a Dutch oven over medium-high heat. Add chopped onion, celery, and chili powder; sauté 3 minutes or until tender. Stir in water and next 4 ingredients (water through tomatoes); cook 10 minutes. Add fish; cook 3 minutes or until fish is done. Stir in parsley.

* Can use 1 Cup of fish stock and 1 Cup of water.
