Roasted Cauliflower Soup

Serves 4 Cook Time about 1 hour

Ingredients:
8 C cauliflower florets
2 tsp olive oil
1/2 tsp kosher salt (divided)
non-stick cooking spray
1-1/2 tsp Smart Balance (or other butter substitute)
3/4 C  yellow onion, chopped
4 cloves garlic, chopped
4 C low-sodium chicken broth
1 C water
1/2 C half and half
1/4 C fresh parsley, chopped

Directions:

  1. PPreheat oven to 450.
  2. Place cauliflower in a large bowl and drizzle oil and 1/4 tsp salt. Toss to coat and  arragnge them in a single layer on a rimmed cookie sheet coated with non-stick spray. Bake for 40 minutes or until tender.
  3. In a large pot, heat 1-1/2 tsp butter substitute, add onions and garlic and saute for 5 minutes. Add roasted cauliflower, stock, and 1 cup of water; bring to a boil. Reduce heat and simmer 20 minutes. Remove from the heat and add half and half. With an immersion blender (or a regular blender) blend, in small batches until smooth.

Cauliflower Mashed Potatoes

Use fresh cauliflower instead of frozen. Frozen cauliflower contains too much water and will effect the texture of your mashed “potatoes”.

Serves 4  Cook Time 50 minutes

Ingredients:
1 large cauliflower head, chopped
2 cloves garlic, mashed and roughly chopped
3 Cups low sodium vegetable broth ( chicken broth works too)
to taste black pepper
1/3 Cup grated parmesan cheese (optional)

Directions:

  1. In a large stock pot, boil cauliflower and garlic in broth for 40 minutes (or until fork tender. Drain remaining broth after removing from stove.
  2. Place cauliflower in an electric mixer and blend until completely mashed. Add the pepper Top with parmesan cheese.

Makes 4 Cups: Per Cup 50 Calories, 6g Carbs, 3g Protein, .5g Fat, 4g Fiber

Not Really Rice

Serves 4-6 Cook Time 25 minutes

Ingredients:
4 Tbsp olive oil
1 head cauliflower, trimmed and coarsely chopped
2 tsp sea salt
1 medium onion, diced
1 Cup celery, finely diced

Directions:

  1. In a large skillet heat olive oil over medium heat. Add onion and saute for 10 minutes.
  2. Add celery and saute another 5 mintues. Meanwhille, place cauliflower in a food processor and process intil it’s the texture of rice.
  3. Add cauliflower to the skillet, cover and cook for about 10 minutes until it’s soft, then add salt.
