Deviled Eggs with Pickled Onion

Serves 8 Cook Time 22 minutes

Ingredients:
8 hard boiled eggs, peeled and halved
1/4 c water
1/4 c cider vinegar
1 tbsp Splenda (sugar substitute)
1/4 c red onion, chopped fine
2 tbsp fat-free plan Greek yogurt
2 tbsp fat-free mayonnaise
2 tsp Dijon mustard
1/2 tsp hot sauce
1/4 tsp black pepper
1/8 salt
2 tbsp chives, chopped

 

Directions:

  1. In a medium microwave safe bowl combine water, vinegar, and Splenda; microwave on high for 2 minutes until boiling. Stir in the onion and let it sit for 15 minutes. Drain.
  2. Combine yogurt, mayo, mustard, hot sauce, salt, and pepper in a medium bowl and stir well. Add 6 egg yolks to the yogurt mixture and mash with a fork. (Reserve the other yolks for another purpose)
  3. Stir in 2 tbsp red onions. Spoon the egg mixture in each egg half and garnish with the remaining onions and chives.

Serves 6  Cook Time 15-17 minutes

Eggs! Perfect nutrition in a compact shell. Eggs make a great addition to any salad or by themselves as a snack or lunch option.
Cooking Instructions to boiling the perfect egg every time. Place your eggs in a large stock pot, fill it with cold water to cover the eggs by 1 inch add a sprinkle of salt. Bring the pot up to a boil, immediately remove the pot from the heat and cover with a lid. Let them sit 15- 17 minutes. Cool them to touch, peel and enjoy!

Greek Style Deviled Eggs

Ingredients:
3 Tbsp Fat-free mayo
3 Tbsp plain greek yogurt
2 Tbsp plain feta cheese
1 Tbsp kalamata olives, pitted, chopped
2 tsp oregano, dried

Ranch Style Deviled Eggs

Ingredients:
2 Tbsp Fat-free mayo
1 Tbsp plain greek yogurt
1 Tbsp fat-free sour cream
3 tsp powdered ranch mix

Southern Style Deviled Eggs

Ingredients:
2 Tbsp
Fat-free mayo
2 Tbsp plain greek yogurt
2 tsp mustard
½ Cup celery, minced
¼ Cup dill pickles, minced
3 Tbsp onion, minced
⅛ tsp salt
¼ tsp pepper

Veggie Stuffed Deviled Eggs

Ingredients:
2 Tbsp
Fat-free mayo
2 Tbsp plain greek yogurt
½ Cup celery, chopped
½ Cup bell pepper, chopped
½ Cup scallions
¼ tsp salt
¼ tsp pepper

Hot Cajun Deviled Eggs

Ingredients:
2 Tbsp Fat-free mayo
2 Tbsp plain greek yogurt
3 Tbsp low-sodium cajun seasonings
1 Tbsp pickled jalapeno, chopped
Tabasco to taste

Directions:

  1. Follow the cooking instructions for boiling eggs.
  2. Slice each in half and scoop out the yolk into a medium size bowl and mix in the rest of the ingredients. Refill the egg whites with egg filling.
