Naked Taco Salad

Serves 6 Cook Time 45 minutes

Ingredients:

1 tablespoons extra-virgin olive oil
non-stick cooking spray
1 lb ground turkey
1 packet taco seasoning
1 large onion, chopped
1 garlic clove, minced
4 large tomatoes
1 cucumber, peeled, seeded and cut into slivers
1 medium bell pepper, chopped
1 tablespoon chili powder
1 1/2 teaspoons dried oregano, divided
1/4 teaspoon salt
1/2 cup chopped fresh cilantro
1/3 cup prepared salsa
1/3 c fresh lime juice
2 cups shredded romaine lettuce
Lime wedges for garnish

Directions:

  1. Spray a non-stick skillet with cooking spray and heat oil over medium heat. Add the onion and garlic and cook until fragrant (about 5 minutes). Add the ground turkey and the packet of seasoning and stir as this cooks to mix the seasonings.
  2. Prepare the salad: Layer the cooked turkey on the lettuce and top with chopped tomatoes, cucumbers, and peppers.
  3. Prepare the dressing: In a small bowl mix the chili powder, oregano, salt, cilantro, salsa and lime juice. Mix well and dress each salad. Garnish with extra lime wedges.

Broccoli Stalk Salad

Serves 6 Cook Time 40 minutes

Ingredients:
3 tablespoons chopped fresh Thai basil
1 teaspoon minced peeled fresh ginger
1 teaspoon minced garlic
1 red bird’s eye chile pepper, minced (or red serrano chile)
4 cups broccoli stalks (about 12 ounces) -Peeled and sliced into matchsticks
4 tablespoons fresh lime juice (divided 3 Tbsp and 1 Tbsp)
1/2 teaspoon kosher salt (divided 1/4 tsp and 1/4 tsp)
1 tablespoon extra-virgin olive oil
1/4 teaspoon freshly ground black pepper
2 cups gourmet salad greens
1/4 cup thinly sliced red onion

Directions:

  1. Combine the the matchesticks with the first 4 ingredients and add 3 tablespoons of juice and 1/4 teaspoon salt.
  2. Combine olive oil, 1 tablespoon juice, 1/4 teaspoon of salt, and pepper in a large bowl, stirring with a whisk. Add matchstick broccoli to the salad greens and onions; toss to coat.

Italian Sheperd’s Salad

Serves 4-6 Cook Time 15 minutes

Ingredients:
2 large tomatoes, chopped
1 large cucumber, chopped
1 large Italian sweet pepper
1/4 C red onion, finely chopped
1/2 C fresh parsley, chopped
3 Tbsp olive oil
1 1/2 Tbsp lemon juice
3/4 tsp kosher salt
3/4 tsp pepper

Directions:

Combine all the ingredients and let them sit at least 10 minutes before serving.
