Warm Frisee Salad


Serves: 8 Cook Time: 30 minutes

Ingredients:

1 (12-oz.) package turkey bacon
¼ cup + 1 Tbsp extra virgin olive oil
½ medium onion, sliced thin
1 garlic clove, minced
⅓ cup + I Tbsp sherry vinegar
2 tsp whole grain mustard
½ tsp kosher salt
¼ tsp coarsely ground pepper
4 bunches frisee lettuce, torn
1 pint grape tomatoes halved

Directions:
  1. Cook turkey bacon according to package directions, crumble and set aside.

  2. Saute onion and garlic in 1 Tablespoon of olive oil to soften about 2 minutes.

  3. Stir in vinegar and next 3 ingredients; cook stirring constantly for about 1 minute.

  4. Place frisee and tomato halves in a large bowl and drizzle with warm vinegar mixture, toss to coat. Sprinkle with crumbled tukey bacon and serve immediately.

Sauted Asparagus


Serves: 6 Cook Time: 15 minutes

Ingredients:
2 lb.fresh asparagus
¼ cup butter substitute (Smart Balance®)
I large red bell pepper diced
½ tsp salt
½ tsp pepper

Directions:
    1. Snap off and discard tough ends asparagus.

    2. Melt butter substitute in a large skillet over medium heat. Add asparagus, bell pepper and remaining ingredients, and saute (4 -5 minutes)or until crisp-tender.

      Serve immediately.
